A general misunderstanding and uncertainty of these labels can cause consumers to be hesitant to believe what they are eating is safe.  An Issue Paper and video presented by CAST and Kent D. Messer, Department of Applied Economics and Statistics, and University of Delaware, Newark delves into the process of food labeling and looks at where and why consumers get may confused.
